This easy slow cooker recipe is adapted from Sally Wise’s recipe for Dhal in her book Slow Cooker: Easy and delicious recipes for all seasons. It is a hearty, one pot meal that is also a good way to introduce lentils to a reluctant carnivore. Everyone in our house enjoys it. I use a large slow-cooker for this recipe, but it can easily be halved for a smaller one. Unlike brown and green lentils, red lentils loose their shape and go all mushy during cooking. Sometimes, I add a little more water so the dish has the consistency of a soup.
Easy Slow Cooker Recipe: Dhal and Lamb Shanks
Place the following ingredients in a large slow cooker, and stir to combine:
- 2 diced onions
- 4 crushed garlic cloves
- 400g tinned tomatoes
- 2 cups red lentils
- 1 TBS ground cumin
- 1 TBS ground coriander
- 2 tsp ground tumeric
- 5 cups water or stock (1 more for soup)
- 2 tsp salt
- 4 lamb shanks
Cook for 6-7 hours on low.
Half an hour before serving remove lamb shanks and strip meat from the bone. Cut into chunks.
Return the meat to the slow cooker with:
- 2 TBS Sweet Chilli Sauce
- 1 cup coconut cream
- 1 cup baby peas
Serve with flatbreads or rice, and green leafy salad.
